Coconut flour pancakes

How to make it

  • In a large bowl whisk together coconut flour, tapioca flour, salt, and baking soda.
  • In a separate bowl mix together the milk, maple syrup, vinegar, eggs, and vanilla until smooth.
  • Add wet ingredients to the flour mixture and mix together.
  • Lightly coat a nonstick skillet with butter or coconut oil and place over medium-low heat.
  • Drop about 1/4 cup of the batter onto the skillet and cook until bubbles appear on top.
  • Flip cakes and cook until golden brown on the underside.

Ingredients

4 eggs

1/2 cup coconut flour 

1/2 cup tapioca flour 

1cup coconut milk

1 tbsp maple syrup 

1 tsp vinegar 

1 tsp vanilla 

1/2 tsp baking soda

1/4 tsp salt 

Toppings:

Butter
